Chinese food is the menu many guests think they already understand.
Until they have to choose.
Crispy Dry Chicken sounds easy. Kung Pao Chicken with Cashewnut sounds like a proper Chinese order. Hot Garlic Chicken sounds bold. Ma-Po Minced Chicken Tofu sounds saucy. Chongqing Spicy Chicken sounds serious before it even reaches the table.
They are all Chinese dishes, but they do not behave the same way when you order them.
I see this often at Relax Kitchen in Hallanchowk. Someone says they want Chinese food, but what they mean changes from table to table. One guest wants something dry and shareable. Another wants sauce with rice. A family wants something easier. A group wants one dish that adds flavour to the whole table.
The question that helps most is not which dish sounds good. It is what texture you want at the table.
Dry, saucy, spicy, mild, vegetarian, fish, rice.
Once that is clear, the order becomes much easier.
The Chinese menu may change as we add more dishes, so I would not treat this guide as a full menu. Use it as a way to decide what kind of Chinese food suits your table, then check the current food menu before ordering.

What Chinese Food Should You Order First?
If someone asks me where to start with Chinese food at Relax Kitchen, I usually do not begin with the safest dish.
I ask what kind of Chinese food they want.
Dry and shareable? Saucy with rice? Mild for family? Spicy enough to feel it?
If someone wants to try a proper Chinese dish but does not want to jump straight into heavy spice, Kung Pao Chicken with Cashewnut is a strong place to start. It has texture, flavour and enough familiarity without being the safest possible order.
It is not plain. It is not extreme either.
That is why it works.
If someone wants something easier for a family table, Sweet & Sour Chicken is usually a gentler direction. It gives flavour without starting with strong chilli or Sichuan-style heat.
If someone only wants a dry dish to share, Crispy Dry Chicken or Shredded Chicken makes more sense. But those are different from ordering a saucy dish for dinner.
That distinction matters.
Check the current food menu for today’s Chinese dishes and availability before visiting.
Dry, Saucy or With Rice: Which Should You Choose?
This is the real Chinese food decision.
Not just chicken or veg.
Texture.
Dry dishes work when the table wants something shareable and easy to pick from. Crispy Dry Chicken and Shredded Chicken fit that mood better than a gravy dish.
Dry-saucy dishes sit in the middle. Kung Pao Chicken with Cashewnut, Stir Fry Chicken or Sweet & Sour Chicken can work when you want flavour but do not want the whole meal to depend on rice.
Saucy dishes need more planning. Ma-Po Minced Chicken Tofu, Hot Garlic Chicken or Manchurian Chicken makes more sense when rice is part of the meal. Without rice, the dish may taste good but the table can still feel unfinished.
Spicy dishes are a different decision again. Sichuan Chicken, Chongqing Spicy Chicken and Boiled Sichuan Fish are not dishes I would suggest to someone who only wants “a little spicy.”
Situation
Better Choice
Want something dry and shareable
Crispy Dry Chicken or Shredded Chicken
Want a proper first Chinese dish
Kung Pao Chicken with Cashewnut
Want something easier for family
Sweet & Sour Chicken
Want sauce with rice
Ma-Po Minced Chicken Tofu, Hot Garlic Chicken or Manchurian Chicken
Want stronger heat
Sichuan Chicken or Chongqing Spicy Chicken
Want vegetarian spice
Mushroom Chilli
Want fish with serious flavour
Hot Garlic Fish or Boiled Sichuan Fish
If you are comparing cuisines, Chinese food usually sits differently from both Indian and Thai. Indian food leans more toward curry, naan and rice comfort. Thai food often comes down to noodles, curry and sticky rice. Chinese food is more about dry, saucy, spicy or shared texture.
You can compare our guides to Indian cuisine in Pokhara and Thai cuisine in Pokhara if you are still deciding what kind of meal you want.
Dry or Gravy: What People Get Wrong
This is the mistake I see most often with Chinese food.
A table orders only dry dishes because each item looks different on the menu.
Crispy Dry Chicken. Shredded Chicken. Stir Fry Chicken.
Different names. Different flavours. But when they arrive together, the table can still feel dry.
That does not mean the order is bad. It means something is missing.
Usually sauce.
A saucy dish changes the table. Ma-Po Minced Chicken Tofu, Hot Garlic Chicken or Manchurian Chicken gives rice a purpose. It gives the group something to share. It makes the meal feel more like dinner.
The opposite mistake also happens.
Someone orders a saucy dish and forgets rice. The flavour is there, but the meal feels incomplete.
That is why I explain it this way:
Crispy Dry Chicken is for picking and sharing.Kung Pao Chicken with Cashewnut is for flavour and texture.Ma-Po Minced Chicken Tofu needs rice.Hot Garlic Chicken needs spice awareness.Manchurian Chicken makes more sense as part of a meal, not alone.
Once you think in dry or gravy, Chinese food becomes much easier to order.

Is Chinese Food in Pokhara Spicy?
Chinese food in Pokhara can be mild, medium or very spicy depending on the dish.
The mistake is treating all “Chinese food” as one spice level.
It is not.
Sweet & Sour Chicken is usually the safer direction if you want flavour without starting with heavy heat. Kung Pao Chicken with Cashewnut gives more flavour and texture without becoming the most intense dish on the table.
Then the heat starts changing.
Hot Garlic Chicken is one kind of heat. Sichuan Chicken is another. Chongqing Spicy Chicken is not where I would send someone who only wants “a little spicy.”
Fish is the same. Boiled Sichuan Fish is for someone who actually wants Sichuan-style intensity, not just a mild fish dish with sauce.
So ask before the kitchen starts.
Say it clearly:
Mild.Medium.Spicy.Not too hot.No extra chilli.
A short instruction before the order goes in helps more than a long complaint after the food reaches the table.
Vegetarian Chinese Food in Pokhara
Vegetarian Chinese food at Relax Kitchen should not start with a long list.
It should start with one question.
Simple, spicy or saucy?
Shredded Potato is the simpler direction. It works when you want a vegetarian dish that does not feel too heavy.
Stir Fry Beans is lighter and cleaner. It makes sense when the table wants vegetables without making the dish the heaviest part of the meal.
Mushroom Chilli is for someone who wants vegetarian food with heat. It is not the dish I would suggest to someone asking for mild vegetarian food.
Black Bean Potato works better when you want stronger sauce and flavour. It is more useful when the table needs something vegetarian that still holds its place beside chicken or fish dishes.
That is usually how the decision falls.
Shredded Potato when you want simple.Stir Fry Beans when you want lighter.Mushroom Chilli when you want spice.Black Bean Potato when you want stronger flavour.
One thing worth saying: vegetarian does not automatically mean mild. If you do not want chilli or strong sauce, say so before the order goes in.
Chinese Food for Solo Travellers, Families and Groups
Chinese food can be easy for one person, but the order has to make sense.
A solo traveller may not need three dishes. One dry or dry-saucy dish with rice, or one noodle/rice plate from the current menu, may be enough depending on appetite.
Families need a different approach.
Keep one dish easier. Sweet & Sour Chicken is usually safer than starting everyone with Sichuan Chicken or Chongqing Spicy Chicken. If children are eating, mention that before ordering. The kitchen can guide you better when we know the table.
Groups should think in balance, not quantity.
One dry dish. One saucy dish. One rice or noodle direction. One mild option if children or spice-sensitive guests are eating.
That works better than ordering three dry dishes and wondering why the table feels unfinished.
This is something I notice often. Groups think variety means different names. But with Chinese food, texture matters more. Crispy Dry Chicken and Shredded Chicken may be different dishes, but they do not solve the same problem as Ma-Po Minced Chicken Tofu or Hot Garlic Chicken with rice.

Fish and Stronger Chinese Orders
Fish is where guests should be a little more careful.
Not because it is difficult to order. Because the styles are very different.
Steam Fish is the lighter direction. It is better for someone who wants fish without turning the meal into a heavy or spicy order.
Hot Garlic Fish brings sauce and heat. It makes more sense when you want fish with stronger flavour.
Boiled Sichuan Fish is the serious one. This is not where I would send someone who says, “just a little spicy.” It is for someone who actually wants Sichuan-style intensity.
The same idea applies to chicken dishes.
Sichuan Chicken and Chongqing Spicy Chicken are not just “more flavour.” They are stronger choices. If you are unsure, ask before ordering. That one question can save the whole meal.
What Drinks Go Well with Chinese Food?
Chinese food usually pairs better with drinks that keep the meal clean.
With chilli-style dishes, Sichuan flavours or hot garlic sauce, Fresh Lime Soda works well because it cuts through heat without making the meal heavier. Citrus or mint-based mocktails also work for groups where people want something refreshing.
Fresh juice is better when the food is mild. Smoothies can feel heavier, so I usually suggest them when the food itself is lighter.
The rule is simple: if the food is spicy or saucy, keep the drink sharp and clean. If the food is mild, you have more room for something fruity.
For non-alcoholic drink ideas, read our guide to mocktails in Pokhara.
